Title: Peppery Pear Relish

Yield: 12 Pints

15 Pears, peeled, cored, and
  Ground
12 Medium onions, ground
6 Sweet red peppers, ground
6 Green peppers, ground
6 Hot peppers, ground
2tbCelery seeds
2cWhite vinegar (5% acidity)
2cPrepared mustard
2cSugar
1tbSalt

Combine all ingredients in a large kettle, mixing well. Bring to a boil; reduce heat, and simmer, uncovered, 30 minutes, stirring occasionally.

Pour hot mixture into hot sterilized jars, leaving 1/4 inch headspace. Remove air bubbles; wipe jar rims. Cover at once with metal lids and screw on bands. Process relish in boiling-water bath 20 minutes.
